Ayush Shrestha has opened Ashwin’s CafÉ Restaurant & Bar, located at All Seasons Motel in Dangar St, Armidale. The Focus team had the pleasure of trying some of his food and are still dreaming about those amazing flavours. Ayush tells us of his culinary journey so far …
Where are you originally from, and what brought you to Armidale?
I am from Nepal and have been in Australia almost nine years, and my dream of having my own restaurant brought me to Armidale.
What is your background as a chef?
I started as a kitchen hand eight years ago, then jumped into basic cooking in a Spanish Restaurant in Sydney. There I learnt few basic cooking skills which led me to love culinary art, so I then jumped into a different cuisine (Italian). I wanted to learn more, so I joined a culinary institute in Sydney called William Blue in 2010 and graduated from there in 2012. After my two years of full-time studies, I travelled and worked all around Australia and learnt about the Australian produce market. Now in 2016 I have opened my own restaurant after my son’s name, Ashwin.
Tell us about your restaurant, Ashwin’s?
Ashwin is my son’s name and thus the restaurant is named after him, but this restaurant is also my second child – despite being the same name! Having your own restaurant is every chef’s dream, and this is my first step towards my dream.
Describe the cuisine, and what else can diners expect?
You can find variety here at Ashwin’s. Currently we have Modern Australian, Italian, French in one menu, but soon I am planning on introducing Spanish Tapas, which our customers can share while enjoying our local wines and great atmosphere.
Plans for the future?
Ashwin’s is, at the moment, a casual dining restaurant, but in the next few months I am turning it into a Tapas Bar with high tables and lounges with cocktail bar and a wine bar. We will also keep our casual dining for our customers. Ashwin’s is a great place to hold events and functions; our customers get choices and options for their events.
Tell us about All Seasons Motel and its facilities.
All Seasons Motel has been family owned and operated by Rob and Vicki since 2015. Since their arrival, they have made some much need improvements to this lovely iconic motel. It is set over two floors with internal stair access. It has a large pool and a BBQ area in the spacious gardens. Parking for front ground floor rooms is adjacent to rooms and other parking is close by, with an unloading area near access doors. There is covered parking at the rear of the motel and a lock up caged area for motor bikes if required. The motel can accommodate single travellers, couples, families and coaches, clubs and large groups with our many varied room configurations. Ground and upper floor rooms are available and consist of queen, queen plus single, family queen plus two singles. There’s one disabled room with adjoining queen room (door in-between). The queen rooms with inter connecting doors are for couples or families wanting dual ensuite facilities whilst retaining access to friends or family in the adjacent room.
All rooms have new reverse cycle air conditioners, flat screen tvs, lounge style seating, cushions, a small table and chairs, reading lamps. Beds have comfy doonas and electric blankets plus extra blankets available in the room.

We are both family operated businesses who make all of our customers feel welcome. Motel visitors will not have to go anywhere else, as Ashwin’s has a fully licensed bar and menu that offers extensive choices for all customers.
